    Slice the eggplants into 1/4 inch thick rounds. Sprinkle with salt and let them sit for about 30 minutes to draw out excess moisture.

    In a small pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Remove from heat and set aside.
