1. Prepare the Ingredients

Chop the onions, carrots, and celery into small pieces. Mince the garlic cloves and set aside.

Return the browned oxtail and pork ribs to the pot. Add the tomato puree and beef broth. Stir to combine.

6. Season the Stew

Add bay leaves, salt, and black pepper to taste. Bring to a gentle boil.

7. Simmer

Reduce heat to low, cover the pot, and let simmer for about 2.5 to 3 hours, or until the meat is tender and falling off the bone.

8. Serve

Once the stew is ready, remove bay leaves. Adjust seasoning if needed. Serve hot, garnished with freshly chopped parsley.
