Preparation

    Prep the Seafood

    Clean and prepare the seafood. Ensure the shrimp are peeled and deveined, the squid is cleaned and sliced, and mussels are scrubbed clean. Dice the fish fillet into bite-sized pieces.

    Chop Aromatics

    Finely chop the shallots and mince the garlic. Set aside.

Cooking

    Cook the Aromatics

    In a large pan, heat the olive oil and half of the butter over medium heat. Add the shallots and garlic, and sauté until they are soft and translucent, about 3-4 minutes.

    Toast the Rice

    Add the Arborio rice to the pan and stir well to coat the rice in the oil and butter. Toast the rice for about 2 minutes, stirring frequently until it becomes slightly translucent.

    Add Wine

    Pour in the dry white wine and let it simmer until the wine has mostly evaporated, stirring continuously.

    Cook the Risotto

    Begin adding the fish or seafood stock one ladle at a time, stirring continuously. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process for about 15-20 minutes until the rice is creamy and al dente.

    Add Seafood

    Once the rice is nearly done, stir in the shrimp, squid, mussels, and fish. Cook for an additional 5-7 minutes until the seafood is cooked through and the mussels have opened. Discard any mussels that remain closed.

    Finish and Serve

    Remove the risotto from heat and stir in the remaining butter and chopped parsley. Season with salt and black pepper to taste. Serve immediately while hot.
