Preparation of Lamb

    Prepare the Lamb

    Preheat your oven to 200°C (400°F). Take the leg of lamb and make small incisions in the meat using a sharp knife.

    Season the Lamb

    Peel and slice the garlic cloves. Insert the garlic slices and rosemary into the incisions. Rub the leg of lamb with olive oil, salt, and black pepper.

    Chop the Vegetables

    While the lamb is being prepared, peel and chop the carrots and potatoes into even-sized pieces. Cut the red onion, bell pepper, and zucchini into chunks.

    Season the Vegetables

    In a large mixing bowl, combine the chopped vegetables. Drizzle with olive oil and season with salt and black pepper to taste. Toss until everything is well coated.

Cooking

    Roast the Lamb and Vegetables

    Place the seasoned leg of lamb in a roasting pan and arrange the seasoned vegetables around it. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature of the lamb reaches 60°C (140°F) for medium-rare.

    Rest and Serve

    Once cooked, remove the lamb from the oven and let it rest for 15 minutes before slicing. Serve the sliced lamb alongside the roasted vegetables.
