    Searing the Beef

    In a large Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the roast on all sides until browned, about 8-10 minutes.

    Sautéing Vegetables

    Remove the beef from the pot and add chopped onion, carrots, and celery. Sauté until softened, about 5 minutes.

    Adding Garlic and Herbs

    Add minced garlic, rosemary, and thyme to the pot. Cook for another minute until fragrant.

    Cooking with Wine

    Return the beef to the pot, pour in the Barolo wine, and bring to a simmer. Cover and reduce heat to low, cooking for about 2-2.5 hours or until the beef is tender.

    Peel and cut potatoes into quarters. Place in a large pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.
