    Combine Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Place over medium heat and warm until it just begins to simmer. Do not let it boil.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and thick.

    Temper the Eggs

    Slowly pour about a cup of the warm milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. Once combined, pour the egg mixture back into the saucepan with the remaining milk and cream.

    Cook over medium heat, stirring constantly with a wooden spoon until the mixture thickens enough to coat the back of the spoon (about 170°F or 77°C).

    Remove the saucepan from the heat and stir in the vanilla extract.

    Pour the mixture into a clean bowl and cover with plastic wrap, ensuring the wrap touches the surface of the mixture to prevent a skin from forming. Refrigerate until completely chilled, about 4 hours or overnight.

Churning and Freezing

    Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
