Method
Preparation
- 1
Combine Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Place over medium heat and warm until it just begins to simmer. Do not let it boil.
- 2
Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and thick.
- 3
- 4
Cook the Mixture
Cook over medium heat, stirring constantly with a wooden spoon until the mixture thickens enough to coat the back of the spoon (about 170°F or 77°C).
- 5
Add Vanilla Extract
Remove the saucepan from the heat and stir in the vanilla extract.
- 6
Chill the Mixture
Pour the mixture into a clean bowl and cover with plastic wrap, ensuring the wrap touches the surface of the mixture to prevent a skin from forming. Refrigerate until completely chilled, about 4 hours or overnight.
Churning and Freezing
- 7
Churn the Gelato
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- 8
Add Flavorings (Optional)
If desired, add cocoa powder, fruit puree, or chocolate chips during the last few minutes of churning.
- 9
Transfer to Container
Scoop the gelato into an airtight container and smooth the top. Cover with a lid or plastic wrap and freeze until firm, at least 2 hours.
- 10
Serve
Remove the gelato from the freezer about 10 minutes before serving to make it easier to scoop. Enjoy your homemade gelato!
