Caviar Preparation

    Chill the Caviar

    Before serving, make sure the caviar is properly chilled. Keep it in the refrigerator until you're ready to serve.

Blinis Preparation

    Activate Yeast

    In a small bowl, combine the yeast, warm milk, and sugar. Let it sit for about 5 minutes, or until frothy.

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, buckwheat flour, and salt. Mix well.

    Combine Ingredients

    Make a well in the center of the flour mixture and add the frothy yeast mixture, eggs, and melted butter. Stir until a smooth batter forms.

    Let Batter Rise

    Cover the bowl with a kitchen towel and let the batter rise in a warm place for about 1 hour, or until doubled in size.

    Cook Blinis

    Heat a non-stick skillet over medium heat. Brush with a little melted butter. Pour about 1 tablespoon of batter for each blini. Cook for 2-3 minutes on each side, or until golden brown.

    Keep Warm

    Transfer cooked blinis to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining batter.

Crème Fraîche Preparation

    Combine Ingredients

    In a mixing bowl, combine the heavy cream and buttermilk.

    Let it Sit

    Cover the bowl with plastic wrap and let it sit at room temperature for 12-24 hours, until thickened.

    Once thickened, stir the crème fraîche and refrigerate until ready to serve.
