Method

Preparation of the Beef

  1. 1

    Marinate the Beef

In a bowl, combine the olive oil, salt, and black pepper. Rub the mixture all over the beef sirloin steaks and let them marinate for at least 30 minutes at room temperature.

  2. 2

    Preheat the Grill

Preheat your grill or grill pan over medium-high heat.

  3. 3

    Grill the Beef

Place the marinated beef on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your preferred doneness is achieved.

  4. 4

    Rest the Beef

Remove the beef from the grill and let it rest for 5 minutes before slicing.

Preparation of the Salad

  1. 5

    Prepare the Arugula

While the beef is resting, rinse the arugula in cold water and pat dry.

  2. 6

    Shave the Parmesan

Using a vegetable peeler, shave the Parmesan cheese into thin curls.

  3. 7

    Combine Salad Ingredients

In a large bowl, combine the arugula, shaved Parmesan cheese, and lemon juice. Toss gently to combine.

Serving

  1. 8

    Slice and Serve

Slice the rested beef thinly against the grain. Arrange the slices on a platter with the arugula salad on the side or on top. Serve immediately.
