Prepare the Chicken
Preheat the oven to 425°F (220°C). Pat the whole chicken dry with paper towels and season it generously with salt, black pepper, garlic powder, and onion powder. Rub the chicken with olive oil and place black garlic cloves inside the cavity along with fresh herbs.

Roast the Chicken
Place the chicken breast-side up in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste occasionally with the pan juices.

Prepare the Cheddar Mashed Potatoes
While the chicken is roasting, peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, heavy cream, and cheddar cheese, then mash until smooth. Season with salt and pepper to taste.

Sauté the Green Beans
In a skillet, heat olive oil over medium heat. Add the green beans and sauté for about 5-7 minutes until tender-crisp. Season with salt and black pepper, then add the roasted black garlic, mashing it slightly to combine.

Serve
Once the chicken is done, let it rest for 10 minutes before carving. Serve the roasted chicken with cheddar mashed potatoes, black garlic green beans, and a drizzle of demi-glace.
