Prepare the Calamari
Clean and slice the calamari tubes into rings. Pat them dry with paper towels.
Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, whisk together the eggs and buttermilk.
Coat the Calamari
Dip the calamari rings into the egg mixture, then dredge them in the flour mixture until well coated.
Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Calamari
Carefully add the coated calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
Prepare the Sauce
In a small bowl, mix the sweet & sour sauce and Thai chili paste until well combined.
Serve
Serve the crispy calamari hot with the sweet & sour chili sauce on the side for dipping.
