Preparation Instructions
- 1
Prepare the Croutons
In a saucepan, bring water to a boil. Slowly whisk in cornmeal, stirring constantly to avoid lumps. Cook for about 5-7 minutes until thickened. Spread the mixture onto a baking sheet to cool, then cut into cubes. Heat olive oil in a skillet and sauté the croutons until golden and warm. Set aside.
- 2
Make the Caesar Dressing
In a small bowl, whisk together lemon juice, minced garlic, anchovy paste, Dijon mustard, Worcestershire sauce, salt, and black pepper. Slowly drizzle in olive oil while whisking until the dressing is emulsified.
- 3
Assemble the Salad
In a large bowl, tear the romaine hearts into bite-sized pieces. Add the warm croutons and shaved Parmesan cheese. Drizzle the Caesar dressing over the salad and toss gently to combine.
- 4
Serve
Divide the salad among serving plates and garnish with additional Parmesan if desired. Serve immediately.
