Cool and Cut
Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out the majority of the flesh, leaving a thin layer of potato on the skin.

Add Cheese and Bacon
Preheat the oven to 450°F (230°C). Place the potato skins on a baking sheet, cut-side up. Fill each skin with shredded cheddar cheese and crumbled bacon.

Bake Again
Bake the filled potato skins in the oven for about 10-15 minutes, or until the cheese is melted and bubbly.
