    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water and dry them with a towel. Pierce each potato several times with a fork to allow steam to escape during baking.

    Season and Bake

    Rub each potato with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes or until the skins are crispy and a fork easily pierces the center.

Assembling the Skins

    Cool and Cut

    Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out the majority of the flesh, leaving a thin layer of potato on the skin.

    Season the Skins

    Brush the inside of each potato skin with olive oil and sprinkle with black pepper.

    Add Cheese and Bacon

    Preheat the oven to 450°F (230°C). Place the potato skins on a baking sheet, cut-side up. Fill each skin with shredded cheddar cheese and crumbled bacon.

    Bake Again

    Bake the filled potato skins in the oven for about 10-15 minutes, or until the cheese is melted and bubbly.

    Remove the potato skins from the oven and sprinkle with chopped green onions.

    Serve the loaded potato skins hot with a side of sour cream for dipping.
