Marinate the Chicken
In a bowl, mix olive oil, salt, and black pepper. Add chicken breasts and coat evenly. Marinate for at least 30 minutes.

Prepare the Sauce
In a saucepan, combine soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger. Heat over medium heat until the sugar dissolves.

Thicken the Sauce
In a small bowl, mix cornstarch and water until smooth. Gradually add to the saucepan, stirring constantly. Let it simmer for about 5 minutes until thickened.

Cook the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked.

Glaze the Chicken
During the last few minutes of grilling, brush the thickened teriyaki sauce over the chicken to glaze it.

Cook the Rice
In a pot, combine white rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
Serving

Serve the Dish
Slice the grilled teriyaki chicken and serve it over the cooked rice. Drizzle additional teriyaki sauce on top if desired.
