Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse sushi rice under cold water in a fine mesh strainer until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice gently with a wooden spoon, being careful not to mash the grains.

Prepare Fish and Fillings

    Slice the Salmon and Tuna

    Using a sharp knife, slice the fresh salmon and tuna into thin strips, about 1/4 inch thick.

    Prepare the Vegetables

    Cut the avocado in half, remove the pit, and slice into thin strips. Cut the cucumber into thin julienne strips.

Assemble the Sushi
