Preparation

Prepare Sushi Rice

1. Rinse the Rice

Rinse sushi rice under cold water in a fine mesh strainer until the water runs clear. This removes excess starch.

2. Cook the Rice

In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

3. Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice gently with a wooden spoon, being careful not to mash the grains.

Prepare Fish and Fillings

4. Slice the Salmon and Tuna

Using a sharp knife, slice the fresh salmon and tuna into thin strips, about 1/4 inch thick.

5. Prepare the Vegetables

Cut the avocado in half, remove the pit, and slice into thin strips. Cut the cucumber into thin julienne strips.

6. Prepare Cream Cheese

Soften the cream cheese by leaving it at room temperature for about 15 minutes, then slice it into thin strips.

Assemble the Sushi

7. Lay the Nori

Place a sheet of nori on a bamboo sushi mat, shiny side down.

8. Spread the Rice

Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

9. Add Fillings

Place slices of salmon, tuna, avocado, cucumber, and cream cheese in a line across the center of the rice.

10. Roll the Sushi

Starting from the bottom, use the bamboo mat to roll the sushi tightly towards the top border. Seal the edge with a little water.

11. Slice the Sushi Rolls

Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

12. Arrange the Platter

Arrange the sushi pieces on a serving platter. Add a small bowl of soy sauce, pickled ginger, and wasabi on the side.

13. Enjoy!
