1. Marinate the Beef

In a bowl, combine the thinly sliced beef with soy sauce, mirin, sesame oil, minced garlic, and ginger. Mix well and let it marinate for at least 30 minutes.

2. Prepare the Vegetables

Chop the green onions, slice the mushrooms, and halve the baby bok choy. Set aside.

3. Cook the Udon Noodles

Bring a pot of water to a boil and cook the udon noodles according to package instructions. Drain and set aside.

4. Prepare the Broth

In a large pot, combine the beef broth, soy sauce, mirin, salt, and pepper. Bring to a simmer over medium heat.

5. Cook the Beef

In a separate pan, heat a little oil over medium-high heat. Add the marinated beef and stir-fry until browned and cooked through, about 3-5 minutes. Remove from heat.

6. Add Vegetables to Broth

Once the broth is simmering, add the sliced mushrooms and halved baby bok choy. Cook for about 3-4 minutes until the vegetables are tender.

7. Combine Everything

Add the cooked udon noodles and stir-fried beef to the broth. Mix well and let everything heat through for an additional 2 minutes.

8. Serve the Dish

Ladle the beef udon into bowls, garnish with chopped green onions, and serve hot.
