Prepare Sushi Rice

    Rinse the Rice

    Place sushi rice in a fine mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine rinsed rice and water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 18-20 minutes until water is absorbed. Remove from heat and let sit covered for 10 minutes.

    Season the Rice

    Transfer rice to a large bowl. In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar dissolves. Pour over warm rice and gently fold in with a spatula until evenly coated.

Prepare Sushi Filling

    Slice the Salmon

    Using a sharp knife, slice the fresh salmon fillet into thin strips, about 1/4 inch thick.

    Prepare Vegetables

    Julienne the cucumber and slice the avocado thinly. Set aside.

Assemble Sushi

    Lay Out Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a 1 inch border at the top.

    Add Fillings

    Arrange slices of salmon, cucumber, and avocado across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth after each cut to keep the edges clean.
