Method

Preparing the Broth

  1. 1

    Combine Ingredients

In a large pot, combine the chicken broth, water, soy sauce, miso paste, sesame oil, grated ginger, minced garlic, and chopped green onions.

  2. 2

    Simmer the Broth

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for about 20 minutes to allow the flavors to meld.

Cooking the Noodles

  1. 3

    Boil Water

In a separate pot, bring water to a boil. Add a pinch of salt to the boiling water.

  2. 4

    Cook the Ramen Noodles

Add the ramen noodles to the boiling water and cook according to package instructions, usually about 3-5 minutes until tender. Drain and set aside.

Preparing the Toppings

  1. 5

    Prepare Soft-Boiled Eggs

Bring a small pot of water to a boil. Carefully add the eggs and boil for 6-7 minutes for a soft center. Remove, cool in ice water, peel, and slice in half.

  2. 6

    Slice Chashu Pork or Chicken

If using Chashu pork or cooked chicken, slice it into thin pieces.

  3. 7

    Sauté Shiitake Mushrooms

In a small pan, sauté sliced shiitake mushrooms in a little sesame oil until tender, about 5 minutes.

Assembling the Ramen

  1. 8

    Combine Everything

In bowls, place a serving of cooked ramen noodles. Ladle the hot broth over the noodles. Arrange toppings: soft-boiled eggs, nori sheets, bean sprouts, corn, chashu pork or chicken, and sautéed shiitake mushrooms.

  2. 9

    Garnish and Serve

Sprinkle sesame seeds on top and garnish with additional green onions if desired. Serve hot.
