Method

Prepare the Mochi Dough

    Mix Ingredients

    In a microwave-safe bowl, combine the sweet rice flour and sugar. Gradually add water while stirring until the mixture is smooth and free of lumps.

    Cook the Dough

    Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, then cover and microwave for another 1 minute. Stir again, cover, and microwave for an additional 30 seconds. The dough should be slightly translucent and sticky.

    Cool the Dough

    Let the mochi dough cool for about 10 minutes, until it’s safe to handle.

    Dust Surface

    On a clean surface, dust cornstarch to prevent sticking. Place the mochi dough on the surface and dust the top with more cornstarch.

Assemble the Mochi Ice Cream

    Divide the Dough

    Using a knife or dough cutter, divide the mochi dough into 8 equal portions.

    Flatten the Dough

    Take one portion of mochi dough and flatten it into a circle with your fingers or a rolling pin. Aim for about 1/4 inch thickness.

    Scoop a tablespoon of your chosen ice cream flavor into the center of the flattened dough.

    Wrap the Ice Cream

    Carefully fold the edges of the mochi dough over the ice cream, pinching to seal completely. Repeat with the remaining dough and ice cream.

    If desired, roll the mochi ice cream balls in a mixture of powdered sugar and cornstarch to prevent sticking.
