Preparing the Chicken

    Prepare the Chicken

    Start by flattening the chicken breasts to an even thickness of about 1/2 inch using a meat mallet or rolling pin. This ensures even cooking.

    Season both sides of the chicken breasts with salt and black pepper.

    Dredge in Flour

    Place the all-purpose flour in a shallow dish. Dredge each chicken breast in the flour, ensuring it is fully coated. Shake off any excess flour.

    Prepare Eggs

    In a separate bowl, beat the large eggs until well mixed.

    Coat with Panko

    Dip the floured chicken into the beaten eggs, allowing excess to drip off, then press it into the panko breadcrumbs until fully coated.

Frying the Chicken

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

    Carefully place the breaded chicken breasts into the hot oil, cooking in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

Making the Tonkatsu Sauce

    In a small bowl, combine the tonkatsu sauce, soy sauce, sugar, and mustard. Stir until the sugar is dissolved and the ingredients are well mixed.

    Slice the fried chicken into strips and serve hot with the tonkatsu sauce drizzled on top or on the side for dipping.
