Broth Preparation

    Make the Broth

    In a large pot, combine the beef bones and water. Bring to a boil over high heat, then reduce to a simmer.

    Add Flavorings

    Add soy sauce, mirin, ginger, garlic, and green onions to the pot. Simmer for at least 2 hours, skimming off any foam that rises to the top.

    Season the Broth

    After simmering, taste the broth and add salt to taste, then strain the broth to remove solids. Set the broth aside.

Noodle and Meat Preparation

    Cook the Beef

    Slice the beef sirloin into thin strips. In a skillet, cook the beef over medium-high heat for about 5 minutes or until browned. Set aside.

    Prepare the Noodles

    In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

    Prepare the Bok Choy

    In the same pot used for the noodles, briefly blanch the bok choy in boiling water for about 1 minute until tender. Remove and set aside.

Assembling the Ramen

    Assemble the Bowls

    In serving bowls, add a portion of the cooked ramen noodles. Ladle hot broth over the noodles.

    Add Toppings

    Top each bowl with cooked beef, halved soft-boiled eggs, bok choy, and nori sheets. Sprinkle with sesame seeds as desired.

    Serve and Enjoy

    Serve the beef ramen hot, garnished with additional green onions if desired.
