    Prepare the Base

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.

    Add Aromatics

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Sausage

    Add the sliced andouille sausage to the pan and cook until browned.

    Add Rice and Liquids

    Stir in the diced tomatoes, paella rice, saffron, paprika, and chicken broth. Season with salt and black pepper to taste. Bring to a boil.

    Simmer

    Reduce the heat to low, cover the pan, and let it simmer for about 15 minutes.

    Add Seafood

    After 15 minutes, add the calamari, scallops, and shrimp to the pan. Cover and cook for another 5-7 minutes, or until the seafood is cooked through and the rice is tender.

    Finish and Serve

    Remove from heat, let it rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
