Cooking Instructions

  1. 1

    Prepare the Vegetables

Slice the zucchini and yellow squash into rounds. Drizzle with olive oil, season with salt and pepper, and grill until tender, about 5-7 minutes.

  2. 2

    Sear the Salmon

Heat the remaining olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet and sear for 4-5 minutes. Flip and cook for an additional 3-4 minutes or until cooked through.

  3. 3

    Make the Lemon Dill Cream

In a small saucepan, combine heavy cream, lemon juice, and chopped fresh dill. Heat on low, stirring occasionally, until warmed through. Do not boil.

  4. 4

    Plate the Dish

On each plate, arrange grilled squash and sliced heirloom tomatoes. Place the seared salmon on top and drizzle with lemon dill cream.
