Greek Gyros With Tzatziki Sauce Recipe

Method

Marinate and Cook the Meat

Prepare the Meat Marinade

In a large mixing bowl, combine 2 tablespoons of olive oil, the juice of 1 lemon, 3 cloves of minced garlic, 2 teaspoons of dried oregano, 1 teaspoon of paprika, 1/2 teaspoon of cumin, salt and pepper to taste. Stir to form a marinade.

Marinate the Meat

Add 1 pound of sliced chicken thighs or pork (depending on preference) to the marinade. Toss to fully coat all pieces. Cover and refrigerate for at least 1 hour, preferably overnight.

Cook the Meat

Heat a grill pan or skillet over medium-high heat. Add the marinated meat and cook for 6–8 minutes, turning occasionally, until fully cooked and browned. Set aside to rest.

Prepare the Tzatziki Sauce

Grate the Cucumber

Grate 1/2 of a cucumber and place it in a fine mesh sieve. Sprinkle lightly with salt and let it sit for 10 minutes to release excess water. Then press or squeeze to remove any remaining liquid.

Mix the Tzatziki Ingredients

In a medium bowl, combine the grated cucumber with 1 cup of Greek yogurt, 1 clove of minced garlic, 1 tablespoon of olive oil, 1 tablespoon of chopped fresh dill, 1 teaspoon of lemon juice, and salt and pepper to taste. Stir well and refrigerate until ready to use.

Assemble the Gyros

Warm the Pita

Heat pita bread in a dry skillet or on the grill for about 30 seconds per side, or until warm and slightly toasted.

Layer the Ingredients

Place a warm pita on a plate. Add a layer of cooked meat down the center, followed by sliced tomatoes, shredded lettuce, and thinly sliced red onions.

Add Tzatziki Sauce

Spoon a generous amount of tzatziki sauce over the top of the fillings.

Fold and Serve

Fold the pita around the fillings and wrap in parchment or foil to hold together, if desired. Serve immediately while warm.
