Prepare the Chicken
Cut the chicken breasts into bite-sized pieces. In a bowl, whisk the egg and add the cornstarch, mixing until well combined. Coat the chicken pieces in the mixture.

Fry the Chicken
Heat the vegetable oil in a large pan over medium-high heat. Fry the coated chicken pieces until golden brown and cooked through, about 5-6 minutes. Remove and drain on paper towels.

Make the Sauce
In a separate saucepan, combine soy sauce, rice vinegar, hoisin sauce, sugar, minced garlic, minced ginger, red pepper flakes, and water. Bring to a simmer and cook for 2 minutes.

Thicken the Sauce
In a small bowl, mix cornstarch with a little water to make a slurry. Add to the sauce and stir until thickened. Stir in sesame oil.

Combine and Serve
Add the fried chicken to the sauce, tossing to coat. Add broccoli florets and cook for an additional 2-3 minutes. Garnish with chopped green onions before serving.
