Prepare the Beef
In a large pot, heat olive oil over medium heat. Add the sliced onions and garlic and sauté until softened. Add the beef chuck roast, browning on all sides. Stir in chipotle peppers, diced tomatoes, beef broth, salt, and pepper. Cover and simmer for about 2-3 hours until the beef is tender. Shred the beef and mix well with the sauce.

Make the Slaw
In a large bowl, combine red cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well and let it sit for at least 15 minutes to allow the flavors to meld.

Bake the Cornbread
Preheat the oven to 400°F (200°C). In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt. In another bowl, mix milk, egg, melted butter, and diced serrano peppers. Combine the wet and dry ingredients, pouring the batter into a greased baking dish. Bake for 20-25 minutes until golden brown.
