Method

Cooking the Steak

    Prepare the Skirt Steak

    Season the skirt steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare. Remove from skillet and let rest.

Making the Serrano Emulsion

    Blend the Emulsion

    In a blender, combine the serrano chili, garlic, lemon juice, and egg yolk. Blend until smooth. With the blender running, slowly drizzle in the vegetable oil until the mixture thickens. Season with salt to taste.

Cooking Scrambled Eggs

    Scramble the Eggs

    In a bowl, whisk the eggs with salt and black pepper. Heat butter in a non-stick skillet over medium-low heat. Pour in the eggs and gently stir until just set and creamy. Remove from heat.

Preparing the Mixed Green Salad

    Toss the Salad

    In a large bowl, combine mixed greens, cherry tomatoes halved, and sliced cucumber. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper. Toss to combine.

Cooking Home Fries

    Dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat. Add the potatoes, season with salt, pepper, and paprika. Cook, stirring occasionally, until golden brown and crispy, about 15-20 minutes.

Serving
