In a skillet over medium heat, cook the chorizo until browned and fully cooked. Drain excess fat if necessary.

Tear the Oaxacan and Chihuahua cheese into smaller pieces and combine them in a bowl.

In a cast iron skillet, layer the cooked chorizo and then top with the mixed cheeses evenly.

Place the skillet over medium heat until the cheese is melted and bubbling, approximately 5-7 minutes.
