    Prepare the Marinade

    In a bowl, combine the achiote paste, orange juice, lime juice, minced garlic, olive oil, salt, and black pepper. Mix well to create a smooth marinade.

    Marinate the Octopus

    Clean the octopus and place it in a large resealable bag or a bowl. Pour the marinade over the octopus, ensuring it is well-coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, or overnight for deeper flavor.

    Prepare the Cooking Surface

    Preheat your grill or a large skillet over medium-high heat. If using a grill, place the banana leaves on the grill to create a non-stick surface.

    Cook the Octopus

    Remove the octopus from the marinade, allowing excess marinade to drip off. Grill or sear the octopus for about 3-4 minutes on each side, until charred and cooked through. The octopus should be tender.

    Remove the octopus from the grill or skillet and let it rest for a few minutes. Slice the octopus into serving pieces and garnish with freshly chopped cilantro. Serve with lime wedges.
