Sandwich Preparation
1. Cook the Chicken
Season the Bell & Evan's chicken breasts with salt and pepper. Heat a skillet over medium-high heat and sear the chicken for about 6-7 minutes per side, or until cooked through. Remove from heat and let rest before slicing.
2. Cook the Bacon
In the same skillet, cook the bacon until crispy. Remove and drain on paper towels.
3. Prepare the Sandwich
On one slice of bread, spread a tablespoon of mayonnaise. Layer with refried black beans, sliced chicken breast, bacon, Oaxacan cheese, pickled jalapeños, lettuce, and tomato slices. Top with another slice of bread.
4. Toast the Sandwich
Heat a pan over medium heat. Place the sandwich in the pan and press down with a spatula. Cook for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.
5. Serve with Fries
Cut the sandwich in half and serve with Tajin dusted fries on the side.
