Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick slices or desired shapes to create hand-cut fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried fries to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

    In a small saucepan over low heat, add the minced garlic and cook gently until fragrant. Stir in red chili flakes and sea salt. Remove from heat.
