Directions

  1. 1

    Prepare the Corn

Preheat the grill to medium-high heat. Grill the corn on the cob for about 10-12 minutes, turning occasionally, until charred. Remove from the grill and let cool.

  2. 2

    Make the Filling

Once cooled, cut the kernels off the cob and place them in a large mixing bowl. Add the crema, lime juice, salt, black pepper, and chili powder. Mix well to combine.

  3. 3

    Prepare the Topping

In a separate bowl, mix the panko breadcrumbs, grated Parmesan cheese, and olive oil until the breadcrumbs are well coated and the mixture is crumbly.

  4. 4

    Assemble the Dish

Preheat your oven to 400°F (200°C). Transfer the corn mixture to a baking dish and spread it evenly. Sprinkle the queso fresco on top, followed by the panko topping.

  5. 5

    Bake

Bake in the preheated oven for about 20-25 minutes, or until the topping is golden brown and crispy.

  6. 6

    Garnish and Serve

Remove from the oven, sprinkle with fresh cilantro, and serve warm. Enjoy your Esquites Gratinee!
