Make the Filling
Once cooled, cut the kernels off the cob and place them in a large mixing bowl. Add the crema, lime juice, salt, black pepper, and chili powder. Mix well to combine.

Prepare the Topping
In a separate bowl, mix the panko breadcrumbs, grated Parmesan cheese, and olive oil until the breadcrumbs are well coated and the mixture is crumbly.

Assemble the Dish
Preheat your oven to 400°F (200°C). Transfer the corn mixture to a baking dish and spread it evenly. Sprinkle the queso fresco on top, followed by the panko topping.

Bake in the preheated oven for about 20-25 minutes, or until the topping is golden brown and crispy.
