    Prepare the Bone Marrow Mashed Potatoes

    Preheat your oven to 400°F (200°C). Cut the bone marrow in half lengthwise and roast in the oven for about 15-20 minutes until golden and bubbly. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash the potatoes with the roasted bone marrow until creamy. Season with salt and pepper to taste.

    Cook the Ribeye Steak

    Season the ribeye steak with salt and pepper. Heat olive oil in a skillet over high heat. Once hot, sear the steak for about 4-5 minutes on each side for medium-rare, or to your preferred doneness. Remove from heat and let it rest for 5 minutes, then slice thinly.

    Assemble the Cholupas

    Warm the corn tortillas in a dry skillet until pliable. Spread a layer of bone marrow mashed potatoes on each tortilla. Top with sliced ribeye, a sprinkle of cotija cheese, a spoonful of salsa verde crudo, and garnish with fresh cilantro.
