Preparation and Cooking

    Prepare the Ash Tortillas

    In a mixing bowl, combine corn flour and salt. Gradually add water while kneading until a smooth dough forms. Divide the dough into small balls and flatten each ball into a tortilla shape. Cook each tortilla on a hot, dry skillet for about 1-2 minutes on each side until slightly charred. Keep warm.

    Char the Scallions and Habanero

    Heat olive oil in a skillet over medium-high heat. Add scallions and sear until charred, about 2-3 minutes. Remove and set aside. Carefully add the habanero pepper and char for 1-2 minutes on all sides. Remove and let cool.

    Roast the Garlic

    Wrap the garlic head in aluminum foil and roast in the oven at 400°F (200°C) for about 30 minutes until soft. Once cool, squeeze out the roasted garlic into a bowl and mash it.

    Prep the Vegetables

    Dice the tomatoes and avocado. Chop the cilantro. Combine all in a bowl with the roasted garlic and mix gently.

    Assemble the Charred Dish

    On each tortilla, layer the charred scallions, the mixture of tomato, avocado, garlic, and cilantro. Slice the charred habanero and place on top. Serve immediately.
