    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). In a bowl, mix salt, black pepper, cumin, garlic powder, and onion powder. Rub this mixture over the pork belly evenly.

    Slow Cook the Pork

    Place the seasoned pork belly in a roasting pan and pour lime juice over it. Cover the pan tightly with aluminum foil and cook in the oven for about 2.5 to 3 hours, until the pork is tender.

    Crisp the Pork

    Once the pork is tender, remove the foil and increase the oven temperature to 450°F (230°C). Roast for an additional 20-30 minutes, or until the skin is crispy. Watch closely to avoid burning.

    Prepare the Marinated Onions

    While the pork is cooking, thinly slice the red onions and soak them in lime juice for at least 30 minutes to marinate.

    Serve

    Once the pork is crispy, remove it from the oven and let it rest for a few minutes. Shred the pork and serve with marinated red onions, salsa verde, and fresh cilantro on the side.
