    Prepare the Home Fries

    Peel and dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat, add the potatoes, and season with salt and pepper. Cook until golden brown and crispy, about 15-20 minutes, stirring occasionally.

    Marinate the Red Onions

    Slice the red onion thinly and soak in a mixture of vinegar, water, and salt for about 10-15 minutes to marinate.

    Prepare the Serrano Tar Tar

    Finely chop the serrano peppers and mix with a pinch of salt. Set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack the eggs into separate bowls and carefully slide them into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

    Assemble the Hash

    In a large serving dish or individual plates, layer the crispy home fries, followed by the shaved roast brisket, marinated red onions, diced avocados, and serrano tar tar. Top each serving with a poached egg.

    Drizzle cilantro crema and crema mexicana over the top of each serving. Garnish with fresh cilantro and mixed greens.
