Method

Steak Preparation

    Make the Espresso Rub

    In a small bowl, combine espresso powder, brown sugar, smoked paprika, salt, and black pepper to create the rub.

    Marinate the Steak

    Rub the mixture generously over the bavette steak and let it marinate for at least 30 minutes at room temperature or refrigerate for up to 2 hours.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest and Slice the Steak

    Remove from heat, let it rest for 5 minutes, then slice thinly against the grain.

Tater Cakes Preparation

    Prepare the Potatoes

    Peel and grate the russet potatoes. Squeeze out excess moisture using a clean kitchen towel.

    Mix Tater Cake Ingredients

    In a mixing bowl, combine grated potatoes, chopped green onions, egg, flour, and salt. Mix until well combined.

    Fry the Tater Cakes

    In a skillet, heat oil over medium heat. Form the potato mixture into small cakes and fry for about 4-5 minutes on each side until golden brown.

    Drain and Serve Tater Cakes

    Transfer cooked cakes to a paper towel-lined plate to drain excess oil.

Poaching Eggs

    Prepare Water for Poaching

    Fill a large pot with water and bring it to a simmer. Add vinegar to the water.

    Poach the Eggs

    Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water and carefully slide the egg into the center.

    Remove Poached Eggs

    Cook for about 3-4 minutes for soft poached eggs. Remove with a slotted spoon and drain on paper towels.

Jalapeno Hollandaise

    Whisk Egg Yolks

    In a heatproof bowl, whisk together egg yolks and lemon juice until pale and thick.

    Make Hollandaise Sauce

    Place the bowl over a pot of simmering water (double boiler). Slowly drizzle in melted butter while continuously whisking until the sauce thickens.

    Finish Jalapeno Hollandaise

    Stir in minced jalapeno and salt to taste. Remove from heat.

Assembly

    On each plate, place a tater cake, top with a few arugula leaves, then add slices of the espresso-rubbed steak.

    Top each steak with a poached egg and drizzle with jalapeno hollandaise.
