Method
Pancake Preparation

Prepare Sweet Potatoes
Peel and chop sweet potatoes. Boil in water until tender, about 15-20 minutes. Drain and mash until smooth.

Mix Dry Ingredients
In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.

Combine Wet Ingredients
In another bowl, whisk together the mashed sweet potatoes, milk, eggs, and vanilla extract.

Combine Mixtures
Pour the wet ingredients into the dry ingredients, and add melted butter. Stir gently until just combined; do not overmix.

Cook Pancakes
Heat a non-stick skillet or griddle over medium heat and grease lightly. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for an additional 2-3 minutes until golden brown.
Brown Butter Cream Cheese Frosting Preparation

Brown the Butter
In a small saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.

Mix Frosting Ingredients
In a mixing bowl, combine softened cream cheese, cooled brown butter, powdered sugar, and vanilla extract. Beat until smooth and fluffy.
Bourbon Compote Preparation

Add Sugar and Bourbon
Stir in brown sugar, bourbon, and cinnamon. Cook for an additional 10 minutes until the apples are tender and the mixture is syrupy.
Toasted Pecans Preparation

Toast Pecans
In a skillet, melt the butter over medium heat. Add chopped pecans and brown sugar. Stir and cook for about 5 minutes until the pecans are toasted and caramelized.
Serving

Assemble and Serve
Stack pancakes on a plate, top with brown butter cream cheese frosting, bourbon compote, and toasted pecans. Garnish with sliced almonds if desired.
