Preheat the Oven
Preheat your oven to 400°F (200°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Cut in Butter
Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Cream and Vanilla
Pour in the heavy cream and vanilla extract. Stir until just combined. Do not overmix.

Turn the dough onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut into squares or circles and place on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.

While the shortcakes are baking, wash and hull the fresh strawberries. Slice them into halves or quarters, depending on your preference.

In a medium bowl, combine the sliced strawberries with granulated sugar and lemon juice. Toss gently and let sit for about 15-20 minutes to macerate.
