For the Burnt Honey & Rosemary Syrup

Prepare the Burnt Honey
In a small saucepan over medium heat, add the honey and cook until it begins to bubble and darken in color, about 5-7 minutes. Stir occasionally to prevent burning.

Add Rosemary
Once the honey has turned a deep amber color, remove from heat and add the fresh rosemary sprigs. Let it steep for 15 minutes.

Combine Ingredients
In a cocktail shaker, add the gin, burnt honey & rosemary syrup, and fresh lime juice. Fill the shaker with ice and shake well for about 15 seconds.

Strain and Serve
Strain the mixture into a tall glass filled with ice cubes.

Add Soda
Top the drink with soda water, gently stirring to combine.

Garnish and Enjoy
Garnish with a fresh rosemary sprig and a lime wheel. Serve immediately and enjoy your refreshing Rosemary Gin Fizz!
