For the Burnt Honey & Rosemary Syrup

Method

For the Burnt Honey & Rosemary Syrup

  1. 1

    Prepare the Burnt Honey

In a small saucepan over medium heat, add the honey and cook until it begins to bubble and darken in color, about 5-7 minutes. Stir occasionally to prevent burning.

  2. 2

    Add Rosemary

Once the honey has turned a deep amber color, remove from heat and add the fresh rosemary sprigs. Let it steep for 15 minutes.

  3. 3

    Mix with Water

After steeping, strain the mixture into a bowl or jar to remove the rosemary. Add 1 cup of water to the honey mixture and stir until combined. Let cool completely.

For the Rosemary Gin Fizz

  2. 5

    Strain and Serve

Strain the mixture into a tall glass filled with ice cubes.

  3. 6

    Add Soda

Top the drink with soda water, gently stirring to combine.

  4. 7

    Garnish and Enjoy

Garnish with a fresh rosemary sprig and a lime wheel. Serve immediately and enjoy your refreshing Rosemary Gin Fizz!
