Egg Mixture

Method

Egg Preparation

  1. 1

    Whisk the Eggs

In a large mixing bowl, crack the 6 cage-free eggs. Add the salt and black pepper. Whisk them together until well combined and slightly fluffy.

  2. 2

    Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and jalapeno, and sauté for about 3-4 minutes until they soften and the onion is translucent.

  3. 3

    Add Tomatoes

Stir in the diced tomatoes to the skillet and cook for an additional 2 minutes, allowing them to soften slightly.

  4. 4

    Cook the Eggs

Pour the whisked eggs into the skillet with the sautéed vegetables. Cook gently, stirring frequently, until the eggs are just set but still soft, about 5-7 minutes.

  5. 5

    Add Cheese

Sprinkle the shredded Cheddar Jack cheese over the scrambled eggs, stirring until the cheese is melted and incorporated.

Serving Suggestions

  1. 6

    Prepare the Sides

While the eggs are cooking, prepare the black tots or fresh fruit to serve alongside the migas.

  2. 7

    Plate the Dish

Once the eggs are cooked to your liking, remove them from the heat. Serve the migas hot on plates, with a side of black tots or fresh fruit.

  3. 8

    Enjoy

Garnish with additional jalapenos or cheese if desired, and enjoy your delicious border-style migas!
