Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Add the cold unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently with a fork until the dough comes together. Be careful not to overmix.

Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Fold the dough over itself three times to create layers.

Using a biscuit cutter or a glass, cut out round biscuits. Do not twist the cutter; simply press down and lift.
