Curry Roasted Cauliflower

    Prepare the Cauliflower

    Preheat your oven to 425°F (220°C). Cut the cauliflower into bite-sized florets and place them in a mixing bowl.

    Season the Cauliflower

    Add olive oil, curry powder, garlic powder, salt, and black pepper to the bowl with the cauliflower. Toss well to coat all the florets evenly.

    Roast the Cauliflower

    Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is golden and tender. Stir halfway through for even roasting.

Cheesy Dip

    Make the Cheese Mixture

    In a large mixing bowl, combine the cream cheese, shredded Swiss cheese, sour cream, chopped green onions, minced garlic, and lemon juice.

    Using a hand mixer or a spatula, blend the ingredients together until smooth and creamy. Make sure there are no lumps.
