Method
Bourbon Maple Glaze Preparation
- 1
Make the Glaze
In a small saucepan over medium heat, combine bourbon, maple syrup, soy sauce, minced garlic, and black pepper. Bring to a simmer and let it reduce for about 5 minutes, stirring occasionally until it thickens slightly. Remove from heat and set aside.
Sweet Potato Puree Preparation
- 2
Cook the Sweet Potatoes
In a medium pot, add the sweet potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.
- 3
Blend the Sweet Potatoes
Add butter, salt, and ground cinnamon to the drained sweet potatoes. Use a potato masher or an immersion blender to puree until smooth. Keep warm until ready to serve.
Roasted Broccoli Preparation
- 4
Prepare the Broccoli
Preheat the oven to 400°F (200°C). On a baking sheet, toss broccoli florets with olive oil, salt, and garlic powder until evenly coated.
- 5
Roast the Broccoli
Spread the broccoli in a single layer on the baking sheet and roast for about 20 minutes, or until tender and slightly charred, tossing halfway through.
Salmon Preparation
- 6
Cook the Salmon
Heat a non-stick skillet over medium-high heat. Place the salmon filet skin-side down in the skillet and cook for 4-5 minutes until the skin is crispy. Flip the salmon over, brush with the bourbon maple glaze, and cook for an additional 3-4 minutes or until the salmon is cooked through and flakes easily.
Serving
- 7
Plate the Dish
On each plate, place a scoop of sweet potato puree, top with the glazed salmon, and arrange the roasted broccoli on the side. Drizzle any remaining glaze over the salmon if desired.
