Filet Preparation

    Prepare the Filet

    Preheat your oven to 400°F (200°C). Pat the filet mignon dry with paper towels. Rub olive oil on both sides and season generously with salt and black pepper.

    Sear the Filet

    In a skillet over medium-high heat, add butter. Once melted and bubbly, sear the filet for about 3-4 minutes on each side until browned.

    Add Bleu Cheese

    Remove the skillet from heat and sprinkle bleu cheese crumbles on top of the filet. Transfer the skillet to the oven and bake for about 5-7 minutes, or until the cheese is melted and the filet reaches your desired doneness.

Loaded Potato Casserole Preparation

    Cook the Potatoes

    Boil the russet potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Prepare the Casserole

    Peel and mash the potatoes in a large bowl. Add sour cream, shredded cheddar cheese, chopped green onions, bacon bits, salt, and black pepper. Mix until well combined.

    Transfer the mixture to a greased baking dish and smooth out the top. Bake in the oven at 350°F (175°C) for about 25-30 minutes, or until golden and bubbly.

Roasted Broccoli Preparation

    Preheat the oven to 425°F (220°C). In a large bowl, toss the broccoli florets with olive oil, salt, and black pepper.
