Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring water to a boil. Add a pinch of salt.

  2. 2

    Cook Pasta

Add the pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Preparing Vegetables

  1. 3

    Sauté Vegetables

In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

  2. 4

    Add Vegetables

Add the sliced bell pepper, zucchini, carrot, and broccoli florets to the skillet. Cook for about 5-7 minutes until the vegetables are tender but still crisp.

  3. 5

    Add Cherry Tomatoes

Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.

Making the Sauce

  1. 6

    Add Broth

Pour in the vegetable broth and bring to a simmer. Let it cook for about 2-3 minutes.

  2. 7

    Combine Pasta and Sauce

Add the cooked pasta to the skillet, tossing to combine with the vegetables and sauce.

  3. 8

    Season

Stir in the grated Parmesan cheese and season with salt and black pepper to taste. Cook for an additional minute until heated through.

  4. 9

    Garnish

Remove from heat and sprinkle with chopped fresh basil before serving.
