Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Allow the salmon to marinate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat, about 375°F (190°C).

Grilling the Salmon

  1. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets on the grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is marinating, wash and chop the asparagus, bell peppers, and zucchini into bite-sized pieces.

  2. 5

    Season the Vegetables

In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper until well coated.

Grilling the Vegetables

  1. 6

    Grill the Vegetables

On a separate area of the grill or in a grill basket, add the seasoned vegetables. Grill for about 8-10 minutes, stirring occasionally, until they are tender and slightly charred.

Serving the Dish

  1. 7

    Serve

Once both the salmon and vegetables are cooked, remove them from the grill. Plate the grilled salmon alongside the seasonal vegetables and serve immediately.
