Preparing the Fries

    Cutting the Potatoes

    Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.

    Soaking the Potatoes

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Drying the Potatoes

    Drain the potatoes and pat them dry with a clean kitchen towel.

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Frying the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes.

    Draining the Fries

    Use a slotted spoon to remove the fries from the oil and place them on paper towels to drain excess oil. Season with salt.

    Pat the ribeye steaks dry with paper towels and season both sides with salt and black pepper.

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cooking the Steak

    Add the seasoned ribeye steaks to the skillet and cook for about 4-5 minutes on one side, until a crust forms.

    Flipping the Steak

    Flip the steaks and add the butter, garlic cloves, and thyme to the pan. Continue cooking for another 3-4 minutes for medium-rare, basting with the melted butter.

    Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.
