Season the Pork Chops
Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Pork Chops
In a large skillet over medium-high heat, add olive oil. Once hot, add the seasoned pork chops and sear for about 4-5 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet used for the pork chops, add the diced peaches and cook over medium heat for about 2-3 minutes until they begin to soften.

Carefully pour in the bourbon and apple cider vinegar, stirring well to combine. Add brown sugar, cinnamon, ground ginger, and a pinch of salt to the mixture.

Bring the sauce to a simmer. Allow it to cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly and the peaches are tender.
