Method

Grilling the Lettuce

  1. 1

    Prepare the Lettuce

Cut the romaine lettuce heads in half lengthwise, keeping the core intact. This helps the leaves stay together while grilling.

  2. 2

    Season the Lettuce

Brush the cut sides of the lettuce with olive oil, and season with salt and black pepper.

  3. 3

    Grill the Lettuce

Preheat the grill to medium-high heat. Place the lettuce halves cut-side down on the grill and grill for about 3-4 minutes until slightly charred. Flip and grill for an additional 1-2 minutes on the other side.

Making the Caesar Dressing

  1. 4

    Combine Ingredients

In a blender or food processor, combine mayonnaise, anchovy fillets, garlic, lemon juice, Worcestershire sauce, and Parmesan cheese.

  2. 5

    Blend until Smooth

Blend all ingredients until smooth and creamy. Adjust seasoning with salt and pepper to taste.

Assembling the Salad

  1. 6

    Plate the Grilled Lettuce

Remove the grilled lettuce from the grill and place it on serving plates, cut side up.

  2. 7

    Add Dressing

Drizzle the prepared Caesar dressing generously over the grilled romaine.

  3. 8

    Garnish

Top the salad with croutons, additional grated Parmesan cheese, and chopped parsley for garnish.
