Select 4 medium-sized russet potatoes. Wash them thoroughly under cold running water to remove any dirt.

Peel and Cut Potatoes
Peel the potatoes using a vegetable peeler. Cut them into long strips, about 1/4 inch thick, resembling fries.

Soak Potatoes
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels.

In a large deep frying pan or a deep fryer, heat oil over medium-high heat until it reaches 350°F (175°C).

In a large bowl, toss the dried potato strips with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.
